Taco Salad


  • 1 lb ground beef
  • Taco seasoning
  • 10oz of grated carrots
  • 15oz (1 can) chickpeas
  • 8 or 16oz small cherry tomatoes
  • 1 head of broccoli
  • 8oz (1 pack) shredded cheese
  • 9oz (1 bag) Doritos or any cheddar flavored chip
  • 8oz zesty Italian dressing (half a bottle)
  • 8oz Catalina dressing (half a bottle)

Description: The best parts of a taco mixed together in a convenient bowl of greatness!


  1. Brown the ground beef on a stove top with salt, pepper and your favorite taco seasoning.
  2. Dice the broccoli and slice the grape tomatoes in half and add to a large bowl.
  3. Mix in carrots, chickpeas, cheese, and cheddar chips.
  4. When the ground beef is browned, drain the grease and mix beef with the veggies.
  5. Combine with dressing and mix well.
